"Healthy" Chocolate Cake

A friend made this cake for our lunch date today and it was delicious! The best part is, the cake recipe has no fat. She made a layered cake and used light cool whip and strawberries as the toppings. It is very easy to make and looks so pretty with the layers. A perfect summer treat!

The recipe below is for one 9" cake. You will need to double it to make the cake that is pictured.

Grease one 9" round cake pan
Heat oven to 350°
Sift together:
  1&1/2 c. flour
  4 Tbsp. cocoa powder
  1 c. sugar
  1 tsp. baking powder
  1 tsp. baking soda
  1/2 tsp. salt
In separate bowl mix:
  1/3 c. applesauce (regular or cinnamon)
  1 Tbsp. vinegar
  1 tsp. vanilla extract
  1 c. warm water
Add wet ingredients into dry ingredients and mix until thoroughly combined. Do not over mix. Pour into pan and bake 30-35 minutes until cake has risen and springs back when pressed.

To assemble like pictured, you will need 2 cakes, 1&1/2 lbs of cut up strawberries, and a tub of light cool whip. Spread cool whip on first cake, top with strawberries, top with second cake, more cool whip, and strawberries.
