Ideas for Using Zucchini

Zucchini is both healthy and versatile.  Come summertime, it will also be very plentiful.  It is high in Vitamin C, and has useful amounts of fiber, folate, potassium, and vitamin A.  It is being studied as a cure for asthma because of it's anti-inflammatory properties, and is thought to lower the risk of MS.  It can be used as a healthful additive in numerous dishes.  Here are some ideas...
1) Add shredded zucchini to ground beef prior to cooking in dishes such as tacos, burritos, meat loaf, and Sloppy Joes
2) Dice zucchini, season with Chili powder, cumin, and salt and use with cheese as a filling for quesadillas
3) Add to stir-fry dishes
4) Dice and add to spaghetti sauce
5) Zucchini bread, cookies, and pancakes - substitute 100% whole white-wheat flour for all or even half of the all-purpose flour to add nutrition and fiber
